The Spanish word chile has various meanings, but the most common is the poblano (literally “white chile”). The poblano, when cooked, is a white, sweet, and hot chile. I think of it as the chile in a recipe that you can use to create the same flavor as the chile you use in the recipe.

So as a newbie to the world of Chilean cuisine, I feel like I need to educate myself a bit about chiles and chilis. The one place I can find good information on this is on the website of the National Chile Society. It has a very extensive library of recipes. I highly recommend it. The only thing I found is that in most recipes, the chile is the star ingredient.
Chiles rellenos is a very good example of a chile recipe. In the chile relleno recipe, the chile is called the zorro. The zorro is a chile that is very hard to find, so it was common to use a “zorro” chile to substitute for a “chile relleno.
